ITALIAN PASTA SALAD
(FEATURED ON FOOD FOR THOUGHT, WCNY)
2 c. Sweet Country Italian
1 # thin spaghetti or thin pasta
1# imitation crabmeat
1 # chopped frozen broccoli, thawed
2 cucumbers peeled, seeded, and chopped
Scallions for garnish
Add all ingredients except scallions, stir well. Garnish with scallions. Place in refrigerator until ready to serve.

Chipolte Seafood ala Angle Hair
(FEATURED ON BRIDGE , CHANNE 9 & FOOD FOR THOUGHT, WCNY)
2 c. Sweet & Spicy Chipolte Sauce
1 # angel hair pasta
1 # Peeled & Deveined Shrimp
1 # scallops, sea or bay
1# chopped broccoli, fresh or frozen
Fresh parsley for garnish
Marinade the seafood until ready to use. Cook off pasta as directed on package. Drain and rinse with warm water, add the Chipolte Sauce over pasta, mix well. Cover with saran wrap. Hold till seafood is cooked. Pour seafood on pasta... Garnish with Parsley. Serve immediately.

ROSEMARY DIJON SALMON
4-6 salmon steaks
2 c rosemary Dijon Vinaigrette for marinade
Fresh parsley for garnish
Lemon wedges
Marinade the Salmon for 30 minutes or longer in the vinaigrette. Cook salmon on grill or oven or sauté. Cook until done, 3-4 minutes on each side. . Add the fresh parsley and wedge of lemon as garnish. Serve immediately

CHIPOLTE PORKCHOPS 1-2-3
4-6 Boneless PorkChops
¼ - ½ c.Ramonas Chipolte Dressing Sauce Marinade
garnish with fresh chopped cilantro or parsley Serve with rice and a vegetable
You can marinate the pork chops before you leave in the morning! When you get home put the pork chops in a baking pan and bake at 300 for 45-55 minutes or until tender. Sprinkle with chopped, fresh cilantro or fresh parsley. Cook up the rice and heat up a vegetable and Voila! A zesty treat!

CAJUN STEAK
2 c. Cajun Black Bean marinade
4 steaks of your choice
2 c. sliced mushrooms
2 garlic clove
½ oz. granulated sugar
2 T. olive oil
Marinade the steak with Cajun Black Bean Marinade up to 12 hours
Cook on grill, broil in oven, and cook until desired doneness
Sauté the mushrooms with the garlic’s. Top the steaks with mushrooms let the steak sit 3-4 min. before serving.

RAMONA'S ITALIAN CHICKEN ALA ANGEL
FEATURED ON CHANNEL 9'S BRIDGE STREET SHOW!
Serves 4 Prepping & Cooking time 30 min
4 - 5 Chicken Breast boneless (you can use bone-in as well)
Approx 1 cup Ramona's Sweet Country Italian Dressing. Marinade. Sauce
1 sliced Red pepper cut in long strips
1 Yellow pepper cut in long strips
1 Orange pepper cut in long strips
1/ 2 large white or Vidalia onion sliced in long strips
1 head Broccoli large chopped
Cooked angel hair pasta
Fresh Parsley for Garnish
Marinate chicken in the 1-cup dressing, for as little as 30 min. or overnight. In a large frying pan on med high heat add chicken. Sear on both sides. Turn down heat to med low. When Chicken is more then ½ way cooked. Add your vegetables
and cover. Cook Pasta according to package. Rinse with warm water. Add pasta to bowl. Pour the chicken over
the angle hair pasta and if you need a little more Ramona's sauce just pour on the chicken. The pasta will absorb
the dressing as well. Top with the Fresh parsley. Served with a side of Tomatoes with Basil & Fresh Mozzarella Cheese.

GREEK FETA CHICKEN WRAP
3-4 breasts of chicken
1 cups Greek Feta Dressing
1 tortilla wrap
Romaine Lettuce, chopped
White sweet onion, chopped
Marinade the chicken in Citrus Greek Feta as up to 12 hours, broil, bake or grill. Cool, cut in strips. Place the tortilla wrap on a flat service. Pour some dressing on the tortilla wrap to cover. Add the lettuce in a line in the middle of the wrap. Put onions on the same line, then the chicken. Fold in 2 sides with 2 hands, then with your thumbs roll the wrap in log form tightly. Cut in half. Ready to serve.

CHAMPAGNE WHITE CHOCOLATE MANDARIN CHICKEN SALAD
1 bag spring lettuce & romaine mix
1 carton grape tomatoes
1 c. chopped cabbage (red or white)
¼ c. sliced julienne carrots
¼ c. crunchy Chinese noodles
3 marinated chicken breasts in Champagne dressing,
1 small can mandarin oranges
1 small can slice black olives
1 peeled, seeded, chopped cucumber
1 c. champagne white chocolate mandarin salad
Cook the chicken in oven, grill, stove top until done, Hold.
Arrange on a plate lettuce, tomatoes, cabbage, carrots, oranges, olives and cucumber. Slice each chicken in 3-4 strips, place on top of salad. Add your Chinese noodles and dressing. Serve immediately.

CHIPOLTE CHICKEN
4-5 Chicken Breasts
2 c. Chipolte Marinade
Marinade the chicken up to 12 hours in Ramona’s Chipolte Marinade. It will coat the chicken evenly, so add only as
much to cover. Place on grill, put in oven or bake in oven, till done. When serving top the chicken with a little
more of the Chipolte Dressing.
